…oppose all those things. They are both questionable in their own right and provide slippery slopes to justify other abridgments of liberty, just as you are doing here. There’s no limiting principle, and that’s not how a free country operates.
That aside, the difference between a vaccine mandate for adults and many of the other policies you listed (aside from the vaccines not working in the way they are supposed to) is that it requires you to inject something into your body, perhaps permanent damaging your health. Whether justified or not, a seatbelt law, jury summons or vehicle inspection imposes no such risk.
